You all know my buddy, Blake, by now. I've talked about him before.
I was lucky enough to be a recipient of TCHO chocolate from Blake's giveaway earlier in the month.
I'll be honest, I'm not usually a huge dark chocolate fan. Actually, I do like dark chocolate, but I find that I generally prefer dark chocolate with something in it. Something like dried berries, nuts, mint or even orange. But, I'm trying to refine my palette. Rather than always reaching for milk chocolate, I want to learn to appreicate dark chocolate.
My TCHO chocolate arrived this week. And, well, I liked it. Very much in fact. I tried to be really conscious of the flavors I was tasting. The texture and how it all came together.
The chocolate is smooth with a lower fat content than the milk chocolate I'm used to. I could feel that difference right away. It's a little bitter, very chocolatey and then I taste the earth. It's a little dirty, but in a good way. Then immediately I taste a pretty intense fruitiness, but a very specific fruitiness that I'm not sure I can pin point, but I'm thinking plums or even prunes or raisins. Something sweet and earthy and rich.
The chocolate left my mouth a little dry. It finishes almost tannic the way a great red wine does.
I'm looking forward to trying more TCHO chocolate and I'll continue to explor the world of dark chocolate.

My friends and I had a chocolate tasting once. It was utterly fascinating! I'm not a wine drinker and my sinus issues prevent me from tasting a lot of the finer nuances, but even taking those things into consideration I learned (and tasted!) so much!
We actually had a bit of wine with our chocolate. I'm impressed you tasted earthy!
It's good to pair a nice, high quality dark chocolate with a red wine. They bring the flavors out in each other.
For us, it's usually a piece of Scharffenberger on the tongue with a nice Cab Sav.
I must go check out this chocolate!

I used to only like milk chocolate. But I got some high quality dark chocolate from William Sonoma- now I won't go back to milk chocolate.
CM, Megan and Suzanne -- good when it's good, but bad when it's bad...a bad combo of wine and chocolate is yucky!!
Choconet -- yes, you do, it was great.
Blue -- I don't think I'll betray my beloved milk chocolate.
